Baked Acorn squash with Indian rice

I haven't posted a vegetarian recipe in quite a while now. I was stumped the night I made this one. I wasn't exactly sure what I was going to make with the ingredients that I had. The Cold Buster

In the past weeks there has been a slew of colds, viruses and various other yuck going around. Tis' the season. Today I made a vitamin and protein packed soup that was amazing. Lentils and soy beans are packed with protein and kale is a great source of vitamin k and fiber (it also lowers cholesterol!).

Pumpkin Pie dip and Apple chips

I don't know about you, but I love fall. Everything about it, the colors, the smells, the clothes, the whole shebang. last night I went to a kirtan to celebrate the autumnal equinox, welcoming fall with open arms. I wanted to bring a dish that fully embraced the flavors of autumn so I looked up some recipes for vegan and gluten free pumpkin dip. I also made baked apple chips to go along with the dip. This turned out to be a huge hit at the kirtan.

Lemon-Cayenne Quinoa With Sautéed Tofu

Okay, this one is brag worthy! I wasn't sure exactly what I was going to make for dinner tonight, so I just started with the quinoa and all of the sudden I ended up with a dinner with a masterpiece! I used fresh vegetables just picked from the garden today (cayenne pepper, string beans, and basil) the flavors from the red pepper with the tamari sauce was just savory!

Become Cruelty-free!

Much of our everyday beauty or health care regimens are supporting animal cruelty.  So many large companies still use outdated product testing by using animals as subjects.

Fortunately, we can opt out of supporting animal cruelty by simply changing brands! Many new products are vegan, or do not test on animals. however, we still have to be careful. Certain products are owned by companies that do test on animals. there are so many great sites to find out what brand and products are cruelty free! Be the change!
