Peppery tofu with vegetables

1 clove garlic
1 tsp fresh ginger
1 tsp lemon pepper
1/5 tsp cajun spice
1/2 block of extra firm tofu
1 chili pepper
1/2 yellow bell pepper
8-10 yellow string beans
1/5 tbsp tamari sauce

  • Coat pan with a thin layer of olive oil, heat for a few minutes and add chopped garlic and ginger. Let heat for 5 minutes on low setting.
  • Add chili pepper and tofu. Cover and let cook, flipping tofu occasionally. Add lemon pepper and cajun spice. turn heat up to medium setting
  • Add the string beans and bell pepper, cover and let cook for about 8 minutes. be sure to flip tofu so it does not stick to the pan.
  • Add tamari sauce and reduce heat to low setting. Cover and let cook for another couple minutes or until tofu is firm and dark.
