Pan Fried Ginger Tofu With Long Grain Sage Rice

Yet another yummy entree! Inspired by the previous dish, this dinner was was a hit.

For the Rice:


2.5 cups water
1 tablespoon olive oil
1 cup of long grain brown jasmine rice
1 teaspoon ginger minced
1.5 teaspoon ground sage


Bring 2.5 cups of water (with a little salt and olive oil) to a boil, add rice, ginger and sage. Turn down the burner and let cook for about 20 minutes. add salt and black pepper for taste.


For Tofu:


1 block of extra firm tofu
1 red bell pepper
1.5 cloves of garlic
1.5 tablespoon of ginger minced
3 table spoons olive oil
2 tablespoons of tamari sauce
1 tablespoon maple syrup
teaspoon mustard 
A dash of cayenne pepper for some added heat


Heat up pan with olive oil, garlic and ginger on low heat. Cut the block of tofu into thin rectangles, add the tofu and let brown for about 5 minutes. In a small mixing bowl mix together tamari sauce, mustard, cayenne pepper and maple syrup and add to the pan. Slice the bell pepper and add to the pan. Cover and let cook on a low setting for about 15 minutes, Enjoy!
